Today I took a cooking class from here in Marrakech. It was an excellent introduction to Moroccan cooking and we got a full on tour of the souks (markets).
One of the tastiest things we made was this sweet cucumber juice with thyme. Apparently, it’s a common juice to give children when they come home from school. It’s sweet, but has a little veg in there to keep it healthy and thyme, which apparently is good for digestion.
There’s something very idyllic about imagining whipping this up for you to snack on. It’s much more appealing than a juice box, that’s for sure. Want to try it?
Sweet Cucumber Juice with Thyme
500g cucumber
1 teaspoon thyme
1/2 teaspoon ground cinnamon
1 tablespoon lemon juice
125ml fresh squeezed orange juice
2 tablespoons confectioners sugar
3 teaspoons orange flower water
